Grilled Goat Cheese and Fig Sandwich

Not your classic grilled cheese, this sandwich is perfectly served for breakfast or dinner.

  • 1 teaspoon honey
  • 1/4 teaspoon of grated lemon rind
  • 4 ounces of goat cheese
  • 2 tablespoons of fig jam
  • 8 slices of thin sandwich bread, raisin bread is particularly good for this recipe
  • Cooking spray
  • Optional: Powdered sugar

Lay out all slices of bread.

Combine honey, grated lemon and goat cheese together in a small bowl, stirring until ingredients are mixed together. Spread the mixture on to 4 bread slices, dividing mixture equally between slices and using all of it. Spread 1/2 tablespoon of fig jam on top of goat cheese mixture. Top with remaining bread slices.

Heat a large nonstick pan over medium heat. Add sandwiches to the pan, one or two at a time depending on your pan size. Place another heavy pan on top of the sandwiches, pressing gently to flatten them. Cook 2 minutes on each side with the heavy pan sitting on the sandwiches while they cook. (Alternatively if you have a panini or other sandwich press, use it.)

Optional: dust each sandwich with a sprinkling of powdered sugar.

Makes 4 sandwiches.
