Caviar and Smoked Salmon Canapés

Description

You can serve this decadent hors d’oeuvre on blinis or toast points. Both are equally delicious and properly set the scene for romance on your Valentine’s evening. Don’t forget the champagne– if you’re going all out and having caviar then let’s face it, you may as well whip out the champagne too. Twist. Arm.

Ingredients

3 slices of thin, white sandwich bread– Pepperidge Farm Thin Slices are perfect– cut in to triangles (making 4 triangles per slice of bread)

OR

12 blinis (you can buy blinis at most high-end grocery stores)

1 tablespoon of melted butter

6 ounces of smoked salmon

1 small container of creme fraiche or sour cream (creme fraiche preferred)

1 ounce of caviar (any type will do– my personal favorite is Paddlefish, a less expensive American caviar which is a good substitute for Beluga)

Preparation

Preheat oven to 350 degrees F. Arrange bread triangles on baking sheet. Lightly brush melted butter on to each piece. Bake in oven for approximately 5 to 7 minutes or until just lightly toasted. Remove from oven and let toast points cool. If using pre-made blinis instead of toast points, warm blinis according to package.

Top each toast point or blini with a slice of smoked salmon, a small dollup of creme fraiche or sour cream, and a small spoonful of caviar. Garnish with a fresh herb sprig of your choice (chive is excellent) to add color.
