Cassava or Yucca Fries are a great alternative to potatoes or french fries. They are great as an appetizer or a side. Yucca is a good source of B3 which helps to lower your cholesterol. It is also rich in iron and calcium and has 2x the amount of fiber than in potatoes. This recipe is from my friend (Monica) who is from Brazil and they call it Cassava.
NOTE: Do not consume Yuca raw since it is poisonous in its raw state. Yuca that is available to us in the markets are considered “sweet” meaning less bitter and the process of boiling and cooking them makes them edible.

Ingredients
1 or 2 yucas (cassava)
Vegetable oil for frying (use raw organic coconut oil for even more nutritional value)
Salt for seasoning
Preparation
Peel and rinse yucas
Cut in 2 or 3 pieces depending the size
Boil yucas in salted water until soft and tender when pierced with a fork.
Drain and cool
Cut yucas in halves
Heat oil in a skillet and fry yucas until golden
Put on a paper towel to drain and season with salt
Notes
Yucca sticks may be frozen until ready to use.
Remove from freezer and place immediately in hot oil until golden and crispy.

@Leslie, You can find Yuca in most Latin and Asian Markets. Also check the International produce section of your grocery store and see if they have it. I have also spotted Yuca at Whole Foods and Trader Joes.
