Walt's Greek Salad

Description

An easy, classic Greek salad that happens to be my favorite.

Ingredients

Salad:
1 head romaine lettuce
1 head red leaf lettuce
2 red bell peppers, sliced
1 large cucumber, sliced
1 small red onion, sliced
handful of cherry tomatoes, whole or sliced in half
kalamata olives, pitted and whole
1 block of feta cheese, broken up
dried oregano

Dressing:
1 part white balsamic vinegar (you can also substitute fresh squeezed lemon juice or regular balsamic vinegar)
2 parts extra virgin olive oil
1 mashed garlic clove
1 teaspoon of dijon or grain mustard

Preparation

Salad:
Put all ingredients in a bowl and finish off with pinch of oregano. Toss with dressing.

Dressing:
Whisk all ingredients together.
Salt and pepper to taste.

Notes

Serve with warm ciabatta bread and olive oil.
