On a recent trip to the fair city of Opelousas, LA I had the pleasure of dining at an AB-SO-LUTE-LY fabulous little place called Back in Time. Ms. Wanda Juneau is a gem who runs this gem of a restaurant. My friend, who introduced us to the place, won us over with mention of Lemon Ice – Ice Tea… and on a August day in Louisiana it was not a hard sell.
I am enamored with this so simple, SO delicious drink idea – I had to share.
You will need Lemon Italian Ice and strong southern brewed tea.
Serve the drink in an Ice-Cream Sunday glass – one scoop of the Italian Ice with the tea poured over the top.
That’s it!

Yum! I am a serious sno-cone fan and this sounds like a sister to it. Anything icy scores big in my book. I wonder what would happen with a splash of limoncello!
