Did you know that you could make ice cream with just 1 ingredient? We didn’t either until we came across Faith Durand’s recipe over at The Kitchn. All you need is a bunch of ripe bananas – that’s it! You don’t even need to have an ice cream maker. There are no additional dairy, sweeteners, or ingredients needed just the bananas.
We thought this would make a great treat for the kid’s afterschool snack. All you have to do is cut your ripe bananas into slices, put them on a tray and freeze them until solid, whip them up in a blender or food processor. The texture becomes creamy. Faith also says you can experiment with adding in another ingredient or two like peanut butter or honey. So next time you have over-ripe bananas you have 2 options Banana Bread or Ice Cream!
How to make the ice cream:
• Peel your bananas and cut them into small pieces
• Freeze for just 1-2 hours on a plate
• Blend and Blend- scraping down the bowl when they stick.
• Voilà – Ice Cream!

NICE. I am on a banana kick at the moment. Potassium good. This is a great idea that I am going to try with strawberries too. I use to blend frozen fruit with apple juice to makes frozen desserts.
