Lobster Roll

Description

This is my favorite Lobster Roll Recipe. It is great for Summer, Memorial Day, or Fourth of July.

For the lobster all you have to do is call your grocery stores to see if they have lobster available. If they do have them steam the lobster for you.

I usually call and request the number of lobster I need and let them know I need them steamed and that I will be there at a specific time to pick them up.

Also if you don’t already have a pair lobster scissors get them they will make it easier to get the meat out of the shell. I picked mine up at the grocery store.

I like to serve the lobster rolls with:

Blue Cheese Fritters (recipe is on TTL), green salad, and a bottle of sparkling.

Ingredients

4 cups of lobster meat from steamed lobsters(approximately 2 1 1/2 to 2 pound lobsters)
1 cup mayonnaise
1 head of Butter Lettuce
Juice from 1 lemon
1 teaspoon salt
1/2 teaspoon black pepper
4 New England Style Buns (or thick hot dog buns)
Butter for the buns

Preparation

The Lobster Salad:
After you get your steamed lobster from the store unwrap them and set them out.
On a cutting board start getting the meat out of the tail and the claws and the knuckles (use your lobster scissors)
In a mixing bowl combine mayonnaise, lemon, salt and pepper, Next add the lobster meat using a rubber spatula to gently mix into the dressing

To Assemble:
Butter the new England style buns and toast under the broiler for a minute or 2 until golden brown
Take the buns add a leaf of lettuce and scoop a serving of the lobster salad into the bun
