Fire Grilled Margherita Pizza

Sliced Mozzarella cheese, ripe Roma tomatoes, garden grown basil and ready to go pizza crust all combine on your grill at home to make mouth watering Margherita Pizza in your very own backyard.

Ingredients

- 1 pre-baked pizza crust (I use Mama-Mary's Thin & Crispy)
- 1 tbsp olive oil
- 1 tbsp Italian seasoning mix (I use a mix with a built in grinder for a richer flavor)
- 2 Roma tomatoes sliced very thin
- fresh Mozzarella cheese, sliced (not the shredded stuff - you will probably have to find it in the specialty cheese section, I happened to find one already cut into 1/4 inch disks... bonus time savor on a weekday)
- 4 basil leaves, thinly sliced
- a handful of fresh shredded parmigiano or Romano cheese

Preparation

1. Fire up the grill and let it warm on a medium flame
2. Drizzle the crust with the oil
3. Sprinkle half the seasoning on
4. Lay on the sliced tomato
5. Sprinkle on the basil
6. Layers on the cheese... as much or as little as you want.
7. Sprinkle on the Romano cheese
8. Cover with the remaining seasoning
9. Drop the grill fire to low
10. Lay the pizza on the grill
11. Turn the pizza a quarter turn every minute of so, watch the bottom carefully for burning.
12. Wait until the cheese is melted and bubbly - 6 to 8 minutes.
13. Remove from the grill and let it rest for a minute or so before you slice it.

Serve with a Greek Salad and a great red wine... its a simple, easy, family friendly dish. And, if served off the platter out by the pool... there are hardly any dishes to clean. That makes this busy mom feel kissed by the sun all evening long.
