This weekend I was confronted with what could be a once in a lifetime question… how to honor one of the most amazing women I know on her 80th birthday?

My mother-in-law is truly one of the most amazing women I have ever met and I am grateful and blessed to have her in my life. I know… I know… mother-in-laws are supposed to be these overbearing, you-can-never-love-my-son-like-me kinds of ladies that make our lives miserable, right?

Me… I have learned how to be a go with the flow, keep it simple, kind of girl from my mother-in-law’s example. Her, lived through The Great Depression, tips and know-how have really come in handy this last year as we held our ground through The Great Recession. Her laid back grace is infectious… and I don’t think there has ever been a grandmother who loves her grandkids more. At just over 5 feet, she is a French-Canadian come to Texas, force of love and humor to be reckoned with. Push her too far and she will give The Little Finger… ‘cause you’re just not worth The Middle One. 

So, how then to throw a party, make a meal, celebrate such a woman?

And then… the answer came. In the beautiful weekly newsletter I receive from Betty Crocker… Pink Champagne Cupcakes!

They were easy and fun to make – even more fun to decorate – and with Champagne Buttercream Frosting… they were a dream to eat.

So, here is the recipe for you to make and share with someone special in your life.

  2. The fact that this recipe calls for 1 box of Betty Crocker white cake mix makes me incredibly happy. LOL No Joke, I am not a girl with a lot of extra time on my hands during this particular moment in my life, so any short cuts to deliciousness are *greatly* appreciated. I’m going to give this recipe a go this weekend. Thanks!
